Serves about 12

This year (2008) was the first time Reuven led a Seder. Natalie co-led the Seder, and in the end of the evening, she was looking for ALL the leftover pieces of Imma's Passover Pesah Coconut Cake.



Ingredients:

4 eggs
1 1/2 cups sugar
1/2 cup canola oil
100 gram toasted coconut bits
1 pack Osem self-rising Passover flour (OR 1 cup of Passover cake meal plus 1 teaspoon backing powder)
1/2 cup water or orange juice (if Parve is not an issue, use milk)
1 teaspoon coconut or vanilla extract
   
   


Preparation:

  1. heat oven to 350F
  2. cream together oil, sugar and eggs.
  3. add rest of ingridients, mix well.
  4. pour into greased pan
  5. bake until a toothpick comes out not-yukky (about 35 minutes in a normal country, depending on the thickness of the pan)
  6. Enjoy and HAPPY PASSOVER!!!
