Passover Pesach Coconut Cake

This year (2008) was the first time Reuven led a Seder. Natalie co-led the Seder, and in the end of the evening, she was looking for ALL the leftover pieces of Imma's Passover Pesah Coconut Cake.
Ingredients:
4 | eggs |
1 1/2 cups | sugar |
1/2 cup | canola oil |
100 gram | toasted coconut bits |
1 pack | Osem self-rising Passover flour (OR 1 cup of Passover cake meal plus 1 teaspoon backing powder) |
1/2 cup | water or orange juice (if Parve is not an issue, use milk) |
1 teaspoon | coconut or vanilla extract |
Preparation:
- heat oven to 350F
- cream together oil, sugar and eggs.
- add rest of ingridients, mix well.
- pour into greased pan
- bake until a toothpick comes out not-yukky (about 35 minutes in a normal country, depending on the thickness of the pan)
