Klops - Meatloaf
Serves an army - of children
This is not a Goyshe meatloaf, it is a true Yiddishe meatloaf - flavor galore. If you get a slice with the egg then you get one wish - yes, you can get another slice, but only if there is any left after the locusts do their work...
Ima says that these days she doesn't do it in the pressure cooker. In the "good old days" she needed to get everything done before going to work, so the pressure cooker was the only way that made sense. Also today she adds some white wine - to the sauce I guess.
Ingredients:
Meat loaf: | |
1 Kg. | ground meat |
3 Tbs. | onion soup mix |
2 | eggs |
1/3 cup | Matzo meal |
some | Ground pepper |
some | Chopped Parsley |
some | Crushed garlic |
3 | Hard boiled eggs – peeled |
Sauce: | |
2 | onions chopped |
1 Tbs | oil |
1 small can |
Tomato paste and equal amount of water |
some |
Garlic- crushed |
some |
Ground pepper |
some | Oregano |
Preparation:
Preparation of Sauce:- Fry onions in oil in an open pressure cooker

Add rest of the sauce Ingredients.
- Cook a little.
- Mix all ingredients together (except Hard boiled eggs)

Form into loaf

Push into the loaf the Hard boiled eggs

Put into sauce in pressure cooker
- Cook for about 20 minutes on pressure.
Note: May Bake in oven instead of pressure cooker. In that case
– place in loaf Pyrex and cover with foil. Bake 1 –
11/2 hours.
