Serves the whole family

Nachman: Today is Ima's 78th birthday - mazal tov. Elisheva is hosting the whole family (less Reuven - in CA) for a Halloween party - Ima doesn't want a birthday party. I was asked to bring a salad - parev! Irit makes the salads usually, but she is in NY, so I asked Mashav for ideas. Mashav immediately said that we should make Safta's favorite salad that she always orders when at Japanika. So here is Mashav's version of Japanika Style Salad. 



Ingredients:

5 carrots, pealed
4 cucumbers
3/4 big radish, or a bunch of small ones
2 red bell peppers
1/3 cabbage
4-5 green onions
some chinese dried mushrooms, we brought them from China, but you can save the air fare and get them at your local chinese shop
some chinese dried black fungus, we brought from China...
some wakama dried seaweed, the supermarket only had the seaweed for sushi, but our local natural food store had the wakama
1/2 package bean sprouts
200 gr tofu
2 sections dried fine rice noodles
dressing: for cilantro eaters
1 bunch cilantro - yaini kusbara
4 tbs mayonnaise
5 cloves garlic
splash rice vinegar
1 ts fresh ginger
to taste salt and pepper
dressing: for cilantro haters
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup mustard
1/4 cup olive oil
2 tbs sugar
3 cloves garlic
1 ts fresh ginger


Preparation:

  1. soak the dried mushrooms, fungus, seaweed then cut to Julienne
  2. cut the green onion to rings
  3. Julienne in food processor the rest of the vegetables
  4. prepare the rice noodles soke in boiled water for 4 min then rinde in cold (according to package instructions) - cool
  5. mix vegetables together with bean sprouts mushroom and fungus
  6. cut tofu to strips
  7. sprinkle tofu and seaweed on top
  8. for dressings just process all ingredients together...
  9. serve noodles and dressing on the side or (Mashav's idea after the fact) better put the non kusbara dressing on the salad and serve the kusbara dressing and the noodles on the side
